Asparagus Mary Washington
An asparagus garden is an investment of time and money, with little care and attention in the early years; your asparagus 'bed' can thrive for up to twenty five years or more. For the best possible sweetness and flavour and to avoid producing tough (thin) spears, harvest at the right time (after 30 months, patience pays dividends) and height (no less than 250mm)! Young asparagus plants are still maturing and making lot of crude (tough) fibre to meet the demands of producing the necessary plant tissue to accomplishing standing up right. As the plant mature they make less crude fibre, the thicker, more mature spears produce a soft soluble fibre and nutrients, and did you know the base of the thicker mature asparagus spear contains most of its sugars the very part that we often cut off and throw away.
